Ingredients
8 oz 8 orzo pasta
1/4 cup 1/4 Kalamata olives, chopped
1/4 cup 1/4 Extra Virgin Olive Oil
1/2 1/2 yellow or red pepper, diced
1/2 cup 1/2 fresh spinach, chopped
2 teaspoons 2 lemon juice
1/2 medium 1/2 tomato, chopped
1/4 cup 1/4 feta, crumbled
1/2 lb 1/2 large shrimp, peeled and deveined
1/2 cup 1/2 white balsamic vinegar
Directions
- Cook 8 oz Orzo pasta according to package directions.
- In a large bowl, toss pasta with bell pepper, tomato, olive, spinach, and feta.
- In a separate bowl, whisk together olive oil and lemon juice.
- Add shrimp to the olive oil/lemon juice mixture and toss to combine.
- Sauté in a hot skillet over medium-high heat until pink and opaque, about 4 – 5 minutes.
- Add cooked shrimp to the pasta and vegetable mixture.
- Drizzle with white balsamic vinegar and enjoy!
