Ingredients

  • 8 oz 8 orzo pasta

  • 1/4 cup 1/4 Kalamata olives, chopped

  • 1/4 cup 1/4 Extra Virgin Olive Oil

  • 1/2 1/2 yellow or red pepper, diced

  • 1/2 cup 1/2 fresh spinach, chopped

  • 2 teaspoons 2 lemon juice

  • 1/2 medium 1/2 tomato, chopped

  • 1/4 cup 1/4 feta, crumbled

  • 1/2 lb 1/2 large shrimp, peeled and deveined

  • 1/2 cup 1/2 white balsamic vinegar

Directions

  • Cook 8 oz Orzo pasta according to package directions.
  • In a large bowl, toss pasta with bell pepper, tomato, olive, spinach, and feta.
  • In a separate bowl, whisk together olive oil and lemon juice.
  • Add shrimp to the olive oil/lemon juice mixture and toss to combine.
  • Sauté in a hot skillet over medium-high heat until pink and opaque, about 4 – 5 minutes.
  • Add cooked shrimp to the pasta and vegetable mixture.
  • Drizzle with white balsamic vinegar and enjoy!
