Saint Mark the Evangelist

April 25th marks the feast of St. Mark, the writer of the Gospel of Mark. Scholars believe that Mark’s gospel is the earliest among the four canonical gospels and a source of inspiration for the others. Mark was likely an early disciple of Jesus, possibly named John Mark. The Gospel narrates the story of Jesus’ life and ministry, from His baptism to His resurrection.

The story is told like a mystery, with the reader, like the characters, attempting to discern Jesus’ mysterious identity (the Messianic Secret) until the Roman Centurion declares, “Surely this must be the Son of God.” The Gospel moves at a fast pace from one event to another, with the word “immediately” used 41 times! Mark was a talented storyteller, taking the reader on an incredible spiritual journey.

According to the story, Mark became a missionary to Egypt, where he was appointed as the first Pope of the Coptic Church. This church, which remains influential today, was a significant force in Christian history. One of the most popular dishes in Egypt and the Middle East is Baba ganoush, a dip made with baked or smoked eggplant, tahini, and spices. It’s a delicious dip that pairs well with pita bread or chips.
